Coffee and Walnut Mini Cupcakes

My mum asked me if I could make some coffee and walnut cupcakes when I was next baking, I made these on the same day as the Vanilla - vanilla. 


I used a basic recipe:
100g caster sugar
100g self raising flour
100g butter or margarine 
1 egg
few drops of vanilla extract

And then I added 1-2 teaspoons of Camp's coffee essence and some chopped walnuts.

I made these in a hurry so they did not look very good. I decorated them with coffee icing which i made by using 100g butter with 200g icing sugar and a teaspoon of Camp Coffee essence.

I don't think I added enough coffee essence as when I tasted the cakes after they had been cooked for me the coffee taste was not strong enough, but if you think of making it you an add as much or as little as you want. 

I played around with my ribbon border icing nozzle to see what I could create. I then sprinkled with chopped walnuts and dusted with cocoa powder.

Recipe 1 - Vanilla-Vanilla

I'm a bit late uploading this due to beinng a bit busy but here it is... Vanilla-Vanilla.
Ingredient:
- 435g plain flour
- 1 tablespoon baking powder
-1 teaspoon bicarbonate of soda
- 1/2 teaspoon of salt
- 190g unsalted butter
- 400g caster sugar
-4 large eggs
-300ml buttermilk
-1 1/2 teaspoons of vanilla extract
The recipe for this cake I found very peculiar and had never even heard of buttermilk before, it smells like yoghurt and has the consistency of a runny yoghurt. I went along with it and started following the method. Beat butter and sugar, add eggs,beat,  add vanilla, add 1/3 flour, add half buttermilk, 1/3 flour, rest of buttermilk, rest of flour. mixing between each addition.  add to cupcake moulds and cook at gas 3 for 30-35 mins. I used my mini cupcake maker and made mini versions.

The batter made about 50+ mini cupcakes my kitchen was full of cupcakes. I found the method really easy and the end result was light and fluffy :).

I then piped on the vanilla butter cream as best I could.
Ingredients:
-200g butter
-800g icing sugar
-120ml cream
-2 teaspoons vanilla extract


I was rather please with the end result, the piping could have been better but I really liked the cupcake batter.

Sensational cupcakes - Alisa Morov

 I have decided to work through a cupcake book by Alisa Morov that I picked up while shopping one day. It includes 26 recipes that I will follow. I will make mini versions of the cupcakes as I have a mini cupcake maker that I got for Christmas  which I find much easier and quicker to use than an oven. I will try my best to create the designs that are in the book. I have only just started to make cupcakes with buttercream icing so my piping skills are not the best to say the least. The first recipe I am going to try is Vanilla-Vanilla!  And will be trying it out soon :)

Cookie Monster .... DISASTER!!

I saw a picture online of cookie monster cupcakes and thought i would give them a go.

the thing is ... I failed miserably !!!!

this is what they were supposed to look like...
but I used lots and lots of food colouring and it  tasted awful !
even though I used 2 bottles of food colouring it still wasn't enough- the icing wasn't bright blue, and the coconut wasn't so I thought I would just have fun with them ...
this is what they turned out like -
just a bit different :)

My First Blog!

It's my first blog so I don't really know what to write so here goes...

Hey everyone,
I am in college and cooking is a huge interest of mine, nothing will be perfect but will always accept and suggestions on how I improve.

I decided to start a blog as I came across many baking and cooking blogs and were amazed with what people can create and how imaginative they were so thought I would give it a go!

I will be cooking and trying out different recipes and blogging about them. Talking about how I found them and seeking any advice that can help me improve.

I keep having trouble with my buttercream I can never find The right consistency!

Does anyone have any advice on how to get the best smooth and fluffy buttercream ??
